LOVE my Nespresso Vertuoline!

Low calorie rice
Here is a recipe to cook rice to reduce calories and high glycemic content.
I have not tried it yet, but will do so soon.

1/2 cup white rice (dont know how this would work with brown rice)
1 teaspoon coconut oil
1 1/2 cup water
Put rice, oil and water in pot and bring to boil.
Turn down to simmer and simmer for 40 minutes.
Take pot off heat and let come to room temperature.
Put pot with rice in it in the refrigerator over night.
reheat and eat ; )

This is an extremely tall palm tree that is blocking the blazing sun. Is very warm today by the beach I'm sitting on my deck having a cup of coffee and reading Ripley's Game which is an amazing book by the way. The whole Ripley's series is very good. Patricia Highsmith was a very unique writer. & I think a very underrated writer. Most people don't know who she is. She seemed to have died alone in Switzerland in obscurity. My other favorite book by Highsmith is called price of salt. I don't know what it is about her writing that just mesmerizes me.
